Dinner!! Sweet & savory stuffed portabella mushroom. 😘 First i laid out a bed of greens and squeezed fresh lemon juice on top. Then I added: steamed broccoli/carrots, cubed sweet potato, garbanzos, avocado. The brown looking thing is the leftover stuffing mixed with the insides of the mushroom, yeast, and cashews. And finally the mushroom in the middle - i baked it with a creamy and delicious filling made with: mashed garbanzo beans, puréed sweet potato, yeast, onion powder, cilantro, teeny bit of chili powder, and curry. After it was done I added the toppings and broiled it for a few minutes to give it a nice finished crust.
